Steamed Fillet Of Seabass "Oriental Style"
Serves 4

Stir Fry Vegetables
5ml vegetable oil
75g bok choi
50g shitake mushrooms
60g green courgettes
60g yellow courgettes
60g carrots
75g mange tout
60g beansprouts
5g fresh ginger
25ml stir fry sauce

Cut the ginger in fine brunoise.

Heat oil in a wok, fry the mixture of vegetables with the ginger and finish with the stir fry sauce.

   
Stir Fry Sauce
50 ml Hoi Sin sauce
10 ml Mirin
10 ml Soy sauce
20 ml Oyster Sauce

Combine all ingredients and use as required.
